Dressed Rice Noodles

Liven up your rice noodles with soy sauce and toasted sesame oil.

 Allow about 60g flat rice noodles per person, snapping them up if they come in bigger bundles.
 sesame oil
 light soy sauce
 black pepper

I get the no-cook kind. You just soak them in boiling water for 5 minutes. The important thing is not to soak them any longer than that, else they go soggy and wretched.

I usually have them with stir-fried vegetables. I put the noodles to soak, then immediately start stir-frying. When the 5 minutes are up, go see to the noodles. Leave your vegetables to burn. They can take it.

Drain the noodles and immediately toss in a little light soy sauce and sesame oil. Grind in some black pepper, too. If you have to leave them longer than a minute before serving, add in a small amount of water and cover over with a lid. Stir a bit so they don't congeal. But serve them as quickly as possible.
