Mashed Potatoes with leeks

There's nothing better on a cold, autumn day than heaps of lovely mashed potatoes, vegan sausages and gravy.

Serving 2

½ lb  potatoes, chopped
 soya milk
 margerine
 freshly ground salt & pepper
1 small leek, finely chopped

Boil the potatoes for 15 mins, then add the leeks, and boil for another 5-10 mins until all are soft.

Mash with a dollop of soya milk and spoonful of your favourite vegan margerine. Grind in a little salt & pepper. Serve piping hot with vegan sausages, onion gravy, roast parsnips, lashings of lightly steamed greens, etc...

Good with mashed potatoes.
