Japanese Style Salad

This is good light salad, which doesn't need any oil. The seasoned rice vinegar is tasty enough. It goes well with richer, heavier curries or rice dishes.

Serving 1-2

2 spring onions, finely sliced on diagonal
1 tbls seasoned rice vinegar
(it has a little added salt & sugar)
1 mug beansprouts
½ red pepper, thinly sliced
2"  cucumber, in matchsticks

Mix all the veg, then sprinkle with the vinegar and serve.

btw, it won't keep. The vinegar makes stuff go soggy.

Good with Spiced Aubergine & Potato with Coconut, or Slow Roast Aubergine
