Green Rice with Roast Stuff
Really tasty rice with spinach, peas and fresh herbs
1 mug brown rice, well rinsed
1 mug frozen peas
1 mug frozen spinach
1 clove garlic, sliced
3 tbls olive oil
1 ½ mugs water
3 shallots, finely sliced
½ red chilli, chopped
½ squash, peeled and diced
½ courgette, thickly sliced
200g shallots, peeled
plenty of salt & pepper, a dash of soy sauce
1 tbls fresh mint
1 tbsp fresh basil
lemon wedges to serve
Saute the shallots and garlic in 1 tbls oil for a few minutes. When they're softening. add in the rice, peas, spinach, chilli, soy sauce and water.
Bring to the boil, then simmer for 35 minutes.
Heat 2 tbls olive oil in a roasting tin. Add in the shallots, squash and courgette. Grind on plenty of salt & pepper. Roast on high for 30 minutes until well browned.
Mix the roast veg into the rice. Serve sprinkled with herbs, and a squeeze of lemon juice.
