garlickiest baked mushrooms
Allow at least one clove of garlic per mushroom. More if they're not plump ones.
Serving 4
4-6 cloves garlic, crushed
salt & pepper
chilli flakes
dried thyme or oregano
handful of pinenuts
olive oil
4 Large flat field mushrooms
juice of one lime or lemon
Sit the mushrooms stalk-up in an ovenproof dish. Mix the garlic, oil, lemon juice, herbs and spices, and spoon inside the mushroom caps.
Bake at gas mark 5-6 for 20 minutes or so. When almost done sprinkle pinenuts on top and return to oven for a further 5-10 mins.
when mushrooms are soft and pinenuts toasted, serve.
