Thick Chips

Really they're just roast potatoes, but cut into chip-shaped wedges so they'll cook quicker. Also, healthier than deep-frying.

 Potatoes
 Vegetable oil
 salt, pepper
 malt vinegar

Put your oven on the highest light, and heat some vegetable oil in a roasting tin for a few minutes.

I'm not going to tell you how many potatoes to do. You know how hungry you are. Cut them into wedges lengthways. When the oil is hot, put the potatoes in and stir to coat.

Roast for 20 minutes or so, basting regularly, til crisp and browned.

Garnish with lashings of salt, pepper and vinegar.

Great with practically anything.
