Bubble & Squeak Plus

Use up left over potatoes and cabbage in an easy, tasty roast. The apple gives a lovely sweetness.

Serving variable

2 firm apples, thinly sliced
1 small onion, chopped
 leftover mashed potatoes
 leftover cooked red cabbage (or any greens)
6 veggie sausages, roughly chopped
 plenty of olive oil
 salt & freshly ground pepper

Ok, this is a bit vague, cuz it's all about using up your leftovers on boxing day or whatever. Use some initiative, adapt!

Grease a roasting tin. Pile in your leftover cabbage and potatoes (don't have to be mashed, could be any kind. Or if you want to pad it out further, you can slice in some extra, uncooked potatoes). Add onion, apple and sausages. Drizzle generously with olive oil, season with salt and pepper, and roast in a high oven for 40 mins to an hour (depending how full your pan is, whether you added raw potatoes, etc).

Let it get browned and crispy. A dead easy one pot dinner!
