Perfect Brown Rice
Nutty, tender and delicious when you do it right.

1 mug brown basmati rice
2 mugs boiling water
Brown rice expands more than white rice, so you don't need so much of it. One decent sized mug should comfortably feed three, but do a little extra if you're really hungry.
The secret to rice is to measure by volume. It doesn't have to be a mug, just make sure that whatever you measure the rice in, you also measure the water in.
Rinse your rice well under cold water, then put in a pan and add the water.
Cover the pan with a tight fitting lid, and bring to the boil. Once the pan has boiled, turn it down to the very lowest flicker that your stove can maintain, and simmer. Don't take the lid off!
Brown rice needs to cook for 35 minutes, then switch the light off and leave covered to steam for a further 5 minutes.
It's also really good if you fry 1 finely sliced onion and 1 tsp cumin seeds in a little vegetable oil, then add the rice and water on top.
